We sat down with Dana Ryles, Assistant Brewer at Maybee Brewing in Fredericton, New Brunswick, for a deep‑dive conversation on their brewing journey, creative process, and the launch of Don’t Call Me Honey, an Amber Ale brewed with Innomalt malt.
Dana detailed their progression from cleaning duties and cellar work at a small three‑barrel brewery (the Cap) to becoming its sole brewer, and ultimately joining the team at Maybee Brewing. We highlight the brewery's current focus on consistency, quality, and collaboration within the New Brunswick brewing community, as well as the technical and cultural shifts between small‑scale and larger commercial brewing.
